<p>Paella is such a wonderful collection of various ingredients and what you include is entirely up to you. This paella recipe is a combination of calamari, chicken, and sausage for the main ingredients.</p>
<p>The mixture of flavors is awesome! It is a special meal and requires more work than a typical meal that you have during the week. I usually make paella on the weekends which is great because the whole family can enjoy the wonderful smells throughout the day.</p>

<li class="ingredient">2 lbs cleaned medium-sized calamari</li>
<li class="ingredient">5 cloves minced garlic</li>
<li class="ingredient">pinch of red pepper flakes</li>
<li class="ingredient">1 8 oz can tomato sauce</li>
<li class="ingredient">4 oz dry white wine</li>
<li class="ingredient">1 T olive oil</li>
<li class="ingredient">2 chicken legs cut at the joint yielding 2 thighs and 2 drumsticks</li>
<li class="ingredient">2 T olive oil</li>
<li class="ingredient">1/2 t smoked paprika</li>
<li class="ingredient">1/2 t salt</li>
<li class="ingredient">ground black pepper</li>
<li class="ingredient">2/3 lb smoked sausage cut into 1/2 &#8221; pieces</li>
<li class="ingredient">1/2 onion  chopped</li>
<li class="ingredient">pinch of saffron</li>
<li class="ingredient">3/4 cup frozen peas</li>
<li class="ingredient">1 1/2 cups of rice</li>
<li class="ingredient">3 1/2 cups liquid &#8211; calamari juice plus clam stock or water to equal 3 1/2 cups</li>
<li class="ingredient">10 cherry tomatoes cut into thirds</li>
<li class="ingredient">chopped parsley</li>
<li class="ingredient">salt and pepper to taste</li>

<ol class="instructions">
<li>Heat oil in pot for calamari.</li>
<li>Add garlic and cook on medium heat until garlic has softened.</li>
<li>Add red pepper flakes and tomato sauce.</li>
<li>Add calamari to pot.</li>
<li>Simmer covered stirring occasionally for 45 minutes or until calamari is no longer tough.</li>
<li>Strain the calamari and save the juice.</li>
<li>Set both aside or refrigerate if you are cooking paella later.</li>
<li>Combine olive oil, smoked paprika, salt and pepper.</li>
<li>Marinate chicken in it for at least 1/2 hour.</li>
<li>Bake chicken in a foil covered pan at 375F for 50 minutes.</li>
<li>When cool enough to handle, debone and skin the chicken.</li>
<li>Set chicken aside or refrigerate if you are cooking paella later.</li>
<li>Discard skin and bones.</li>
<li>Assembling Paella</li>
<li>Heat oil in a dutch oven.</li>
<li>Saute onions and smoked sausage at medium heat until onion is translucent and sausage is browned. Remove from pan.</li>
<li>Add the rice to the dutch oven and cook the rice stirring until it is slightly browned.</li>
<li>Add the 3 1/2 cups of liquid, add saffron, and stir.</li>
<li>Add the calamari, chicken, sausage, onions, and tomatoes.</li>
<li>Cover and simmer on low heat for about 15 minutes.</li>
<li>Add the peas and parsley and cook for another 10 minutes or until rice is fully cooked.</li>
<li>Let the paella sit off the heat covered for about 5 minutes and serve.</li>
<li>Enjoy!</li>

<p>A few years ago I discovered another way to lighten this recipe.  Instead of breading the entire piece of chicken, I only bread the top.  The breading on the underside only absorbs the fat anyway and who wants to eat that?  This is really easy to prepare but takes about 45 minutes to an hour to cook so it may not be a great weeknight meal depending on your situation.  </p>
<p>I always buy chicken legs or thighs on sale and freeze them so that I can have them any time I want.   This is another easy clean-up recipe since the pan I use to cook the chicken is lined with foil.  You can prepare this recipe ahead and refrigerate until you are ready to bake.  Just let it sit out for about 30 minutes to take the chill off.

<li class="ingredient">1/2 cup flour</li>
<li class="ingredient">1 egg</li>
<li class="ingredient">2 T hot sauce (I use Franks)</li>
<li class="ingredient">1 cup dried bread crumbs</li>
<li class="ingredient">1t dried herbs (I use herbes de provence)</li>
<li class="ingredient">1/2 cup grated parmesan or romano cheese</li>
<li class="ingredient">1/2t garlic powder</li>
<li class="ingredient">salt and pepper to taste</li>
</ul>

<ol class="instructions">
<li>Preheat oven at 375 degrees.</li>
<li>Line a shallow pan big enough to hold the chicken in a single layer with 2 layers of foil.</li>
<li>Cut as much excess fat off of the chicken as you can. You can remove the skin if you want but I don&#8217;t.</li>
<li>Rinse and dry the chicken well.</li>
<li>Salt and pepper the underside of the chicken pieces (I only put crumbs on the top side)</li>
<li>Whisk the egg and the hot sauce together.</li>
<li>Combine bread crumbs, cheese, herbs, garlic powder, salt and pepper.</li>
<li>Put the top part of the chicken piece (skin side) in the flour and shake off excess.</li>
<li>Then put the floured side in the egg mixture.</li>
<li>Finally put it in the breadcrumbs and place on the prepared pan breaded side up.</li>
<li>Bake for about 45 minutes to an hour depending on the size of the chicken parts.</li>
<li>Enjoy!</li>

<p>I cook Tilapia in many different ways but this is one of my favorites because of it&#8217;s simplicity, easy clean up and healthfulness.  </p>
<p>I usually try to cook extra so that we can have leftovers to make tuna type Tilapia sandwiches for lunches.  Just break up the leftover fish and mix in mayonnaise to taste.  Talk about a great sandwich!!</p>
<p>As you have probably realized by now, I love to broil fish.  I love the brown caramelization you get from broiling.  It&#8217;s a fast cooking method and clean if you line your baking sheet with foil.  Give this one a try.  I think you will love it!!

<li class="ingredient">2T mayonnaise</li>
<li class="ingredient">1T whole grain mustard</li>
<li class="ingredient">1/2 to 1t hot sause (I like Frank&#8217;s Red Hot)</li>
<li class="ingredient">2t fresh lemon juice</li>
<li class="ingredient">salt and pepper to taste</li>
</ul>

<li>Lline a baking sheet with a few sheets of foil.</li>
<li>Set the oven to broil.</li>
<li>Put the filets in a single layer on the foil.</li>
<li>Mix the mayonnaise, mustard, hot sauce and lemon juice.</li>
<li>Salt and pepper the fillets.</li>
<li>With a pastry brush, spread the mayo mixture evenly on the filets. (you may have more mayo mixture than you need)</li>
<li>Put the fish under the broiler and cook until the fish is cooked through and the top is nicely browned.</li>
<li>Enjoy!</li>

<p>We eat quite a bit of salmon in our house. It&#8217;s so healthy and you can still buy wild salmon at a very reasonable price. I love broiling fish because of the easy clean up and quick cooking time.</p>
<p>Because salmon is thicker than most white fish, the longer broiling time makes for a nicely browned and crispy top which I really love. This is a simple yet delicious recipe that I have been making for years and almost always make it during the week because it is so easy to pull together.

<li class="ingredient">2 lbs salmon cut into 2 inch fillets</li>
<li class="ingredient">1T olive oil</li>
<li class="ingredient">1T honey</li>
<li class="ingredient">1T maple syrup</li>
<li class="ingredient">2T light soy sauce</li>
<li class="ingredient">salt and pepper to taste</li>
<li class="ingredient">squeeze of fresh lime juice (optional)</li>
</ul>

<h3 class="instructions">Instructions</h3>
<ol class="instructions">
<li>Make the marinade by mixing oil, honey, maple syrup and soy sauce in a bowl.</li>
<li>Add the salmon along with the marinade in a large zip lock bag. Remove as much air as you can and store in the refrigerator turning a few times for up to 2 hours.</li>
<li>Line a broiler pan with heavy duty foil and add the fish. (Discard marinade)</li>
<li>Broil the fish until it&#8217;s browned on top but still a bit underdone in the middle. (The timing will vary depending on the thickness of the fish, the heat of the oven and the distance between your broiler element and the fish.)</li>
<li>Salt and pepper to taste and add a squeeze of fresh lime juice.</li>
<li>Enjoy!</li>

<p>Well, during cabbage season I found a beauty at a farm in the white mountains of New Hampshire.  When you have a fresh product such as this you want to showcase it and do as little as possible to it so that you can savor the flavor of the ingredient.  I started making this sauteed green cabbage recipe years ago in an effort to come up with another vegetable side dish we could have during the week that was fast and healthy.  Even if you think you don&#8217;t like cabbage, this sauteed green cabbage recipe may surprise you.

<p>Salmon is a staple in our household and I prepare it in many ways. This recipe for broiled salmon is one of our favorites because the combination of the balsamic vinegar, mustard, and honey give this broiled salmon a wonderful flavor along with a beautiful caramelized crust on top.</p>
<p>This broiled salmon recipe is quick to prepare and it&#8217;s an easy cleanup since I line a broiler pan with foil before I cook it.  Broiling is such a great way to cook fish because it&#8217;s fast, clean, and you end up with a nice brown crust without adding extra fat. You can find many different broiled salmon recipes around but this one is always a winner in my house!</p>

<p>Fall is my favorite time of the year and there is nothing more fun than visiting the local apple farm when the temperatures start to drop.  Last Fall I visited my parents up in the mountains of New Hampshire and we went to Windy Ridge Apple Orchard as we do every year.  The two variety of apples they had available were Ginger Gold and Paula Red.  I split the half bushel with my sister but that still left me with a lot of apples!!  </p>
<p>The first thing I usually do when I have lots of apples is make apple sauce and use the sauce to make other things such as breads and muffins.  One of the easiest and most delicious desserts is good quality vanilla ice cream topped with warm home made apple sauce. Making this sauce couldn&#8217;t be easier and it makes the house smell wonderful.  This recipe can be adjusted for things like sweetness and chunkiness depending on what your preferences are.  Judging from the first apples of the year it looks like it&#8217;s going to be a great season!</p>

<li class="ingredient">10 apples. (I used half Paula Red and half Ginger Gold but any apple will do)</li>
<li class="ingredient">1/4 to 1/2 cup of sugar</li>
<li class="ingredient">1/4 to 1/2 cup of water</li>
<li class="ingredient">1t cinnamon</li>
</ul>

<ol class="instructions">
<li>Peel, core and chop the apples.</li>
<li>Add the apples to a heavy bottomed sauce pan along with 1/4 cup of sugar, 1/4 cup of water and the cinnamon.</li>
<li>Cook over medium heat partially covered.</li>
<li>Stir every few minutes. It will take about 20 minutes to cook depending on whether you want it chunky or smooth. I like it chunky.</li>
<li>Add water and sugar if needed during cooking.</li>
<li>Eat warm or cold.</li>
<li>Enjoy!</li>

<p>This oven roasted broccoli is a recipe I make at least twice a week.  We all love broccoli and it&#8217;s easy enough to make on a week night but delicious enough for company. <p>I also make this recipe with frozen broccoli but instead of roasting it in the oven I pan fry it on high heat to get that crunch on the outside we love so much.  Frozen broccoli has a lot of water so you need to defrost it and absorb as much of the water as possible before cooking since the extra water will make it steam instead of fry.  Both produce excellent results.</p>

<li class="ingredient">2 crowns of broccoli including stalks</li>

<li class="ingredient">1/2t kosher salt</li>

<li class="ingredient">juice of 1/2 a lemon</li>

<li>Cut the florets off the the stalks and set aside. Peel the tough outer skin from the stalks and chop into 1/2 inch slices. Discard the skins.</li>
<li>Put the florets and stalks on a baking sheet big enough to hold everything in a single layer.</li>
<li>Add olive oil, salt and pepper to the broccoli and toss well.</li>
<li>Roast in a 425 degree oven for about 20 to 25 minutes. Toss the broccoli a few times during cooking in ensure even browning.</li>
<li>Put the broccoli in a serving bowl and add the lemon juice and toss well. Taste for seasoning.</li>

<p>After I made apple sauce with the apples straight from the farm I decided to try and come up with a combination apple bread and streusel topped coffee cake.  It turned out great!!  This coffee cake recipe can be even easier if you want by using store bought apple sauce.  </p>
<p>My family and I do not like overly sweet breakfast cakes so there is less sugar in the cake than most would add.  The streusel topping does however add extra sweetness and crunch.  It&#8217;s great for breakfast with a hot cup of coffee as well as  with vanilla ice cream for dessert.  I will be making this recipe very often!</p>

<li class="ingredient">1C home made or store bought chunky apple sauce</li>
<li class="ingredient">1t cinnamon</li>
<li class="ingredient">1/4t nutmeg</li>
<li class="ingredient">pinch of cloves</li>
<li class="ingredient">1/4C brown sugar</li>
<li class="ingredient">1/2 cup chopped walnuts</li>
<li class="ingredient">1T vegetable oil</li>

<li>In a small bowl mix together the brown sugar, nuts and 1T oil for the streusel topping and set aside.</li>
<li>In a medium bowl combine flour, baking powder, baking soda, cinnamon, nutmeg and cloves.</li>
<li>Beat the 1/2 cup of oil, and sugar well.</li>
<li>Add the egg and beat until mixed well.</li>
<li>Alternately add the flour mixture and apple sauce while beating on low until the mixture is combined.</li>
<li>Grease and flour an 8 by 8 by 2 inch baking pan.</li>
<li>Add the batter to the pan and top with the streusel topping.</li>
<li>Bake at 350 degrees for about 30 minutes or until a toothpick comes out clean when inserted into the center of the cake.</li>

Although you could make this Greek salad any time of the year since all of the ingredients are available at the supermarket, it will not taste nearly as wonderful as using vegetables that you have grown or that have been grown locally.  </p>

<p>The tomatoes, green peppers, and basil you see in this picture came right from our garden.  This time of year my husband and I will shop for our fruits and vegetables at farmers markets.  They cost more than the supermarket but the taste is so superior!  You are also supporting local farmers which I believe everyone should do.  If my oldest daughter who is a college student can afford it, so can you.  </p>

<p>When you buy ingredients that have just been harvested, they last a lot longer so you can shop for the entire week.  Supermarket fruits and veggies just don&#8217;t last that long.  When I make this salad I just put everything in a bowl and add the dressing ingredients individually without measuring because I have been making for so many years.  I provide you with a recipe here, but feel free to vary the amounts in the dressing to suit your taste.</p>

<li class="ingredient">2 fresh tomatoes choped into bite sized pieces</li>
<li class="ingredient">1 fresh cucumber peeled and sliced</li>
<li class="ingredient">1 fresh green pepper sliced</li>
<li class="ingredient">1/2 vidalia or sweet onion sliced</li>
<li class="ingredient">2T chopped fresh basil</li>
<li class="ingredient">1/2C crumbled good quality Feta cheese</li>
<li class="ingredient">3T extra virgin olive oil</li>
<li class="ingredient">1 1/2 to 2T red wine vinegar</li>
<li class="ingredient">salt and pepper to taste (don&#8217;t skimp on the salt and pepper because they bring out the flavor of the vegetables)</li>

<li>Make the dressing by whisking the red wine vinegar with the olive oil salt and pepper.</li>
<li>Put all of the other ingredients in a bowl big enough to toss the salad.</li>
<li>Add the dressing and toss well.</li>
<li>Taste the salad and adjust seasonings if necessary.</li>
